Cheesy Carrot and Onion Soup

This is what we had for lunch today. Easy, cheap and tasty.


Cheesy Carrot and Onion Soup

1 liter water
1 tablespoon liquid vegetable bouillon (I use Touch of Taste concentrated bouillon) or 1 bouillon cube
600 grams carrot
200 grams onion
1/4 teaspoon black pepper
200 grams processed cheese (in Finland, Olympia)

Boil water. Add chopped carrots and onions. Add bouillon. Simmer for 15 minutes or until tender. Add black pepper and cheese. Stir until cheese is melted. Remove from heat and purée with a hand blender.
